I use it all the time. Look for some video of Saulo's Running Escape. It uses many of the same principles.
You gotta make sure you make a tight shell when you turn over. Tight t-rex with your near arm, near side leg drawn up tight (at this point your near arm and leg should look like a combat base-like position). You gotta be really tight, if they get an underhook your back will get taken. And then just commit to the granby. You will not always necessarily get the open guard reset, but you will create a scramble that gives you a chance to either a)improve position or b) try to stand up and go from there.
If you wait until he tries to knee slide mount and then go for it, it lifts him up and has worked well in training for me, but I havn't tried it in competition. Its kinda like the running escape but more in a fetal position, but you got to tuck your chin and keep him from getting the underhook...You can get the idea here.

I do it all the time, instinctively. If I don't recover full guard I usually recover butterfly. Unless the opponent knows it's coming. Then I get double under passed like a rag doll.
So basically, do it fast and fluid. Try not to telegraph.

A) it would be really difficult for them to take your back because you only give a small window. As long as you don't let them get their hands together there's very little chance of it happening. Brandon's suggestion on the running escape is a good one. I learned this one originally from a ribeiro affiliate. It's legit. I like to get wrist control with my top arm and put their hand by my hip like I'm trying to put it in my pocket.
B) the double under is a battle. First thing I do is hand fight. Don't let them clasp their hands at all. Then fight to get your hips down and back making enough space to feed your feet in for a butterfly hook.
C) I'm sure there's an attack you can do. The only one I can think of is the no arm triangle.

Stay tight and work to improve that neck flexibility.
Granbying solo = walking. Granbying out of side = running. You must walk before you can run, same as anything. Good luck!
