If you go to enough small regional shows you will see these gyms at fights. All these styles are out there trying their best. You can probably come up with your own conclusions as to why there aren't too many "pure" martial art stylists at the top of the ranks. I say pure because many top MMA martial artists have studied various styles throughout their lives. Everybody knows about Dan Hardy training with Shaolin Monks when he was younger but must people don't consider him a Shaolin fighter.
Lindsey you are correct about JKD, it was meant as a philosophy much like Taoism is a philosophy and not really a religion until you get idiots starting things like "JKD Fundamentals" schools and it all goes to hell. Luckily for old JKD lovers like me we do have MMA which as you said is basically what JKD should be, although I hope the sport continues to evolve and not hold on to anything that doesn't work or isn't efficient.
As for Shaolin yes they do not support competition fighting, have you not seen the classic series Kung Fu?! Also of course much of what they do isn't functional, but when they get the UFC going in China I hope a Shaolin rebel decides to mix his background with MMA and we might just see something awesome.
As for all the groin shots and eye gouging, I hate that shit and would only use it in life or death situations. Why escalate a fight to permanent damage level if you don't have to. I want to bring back the gentleman fights days with clear rules for challenging a guy to fisticuffs! heheh

That would be cool
