There are multiple reasons that you move your head out of the way. First and foremost is so that your head is out of the way LoL. You try to roll at an angle between your shoulder and your neck. I typically tell my students that you want to roll at the 45 degree angle. If your head is just resting naturally this can lead to some serious problems (especially if you have a fat head like I do).
The second and equally important reason is that to stop your movement in mount the person on top will often manipulate the head. They can do this easily by placing the palm of their hand over your hear and pushing your ear to your shoulder (in the direction you are trying to roll). I promise that if they get your head pinned against your shoulder in the direction that you're trying to bridge there is now way you're going over that shoulder.
With this thought in mind if you pin your ear to your other shoulder not only does it get it out of the way for you to roll but it also makes it very difficulty for them to put that palm on your ear, cross face you or do a number of other very dirty and uncomfortable things to you.

Thanks for the clarification Jeremy & also for taking the time to break down techniques like these online. For guys like me that don't have a local instructor - these types of videos keep my game moving forward in between trips out of town for classroom isntruction.
