Stephen Kesting has a two DVD Sets called "How to Defeat a Bigger Stronger Opponent' as well as many videos online from and in supplementation to them. These are probably the best resources out there for learning the adjustments, techniques, and details for optimally handling weight differences, here are some examples of his content:

Brandon Mullins, the guy who teaches alot of the small guy vs big guy stuff with stephen is actually in houston, I strongly recommend trying to get in contact with his gym since its right near you, and hes an expert at small vs big jitsu. He is only 118lbs and competes against top class competitors.

DanConway: thanks I have been to their site many times and watched practically all of their vids...they are one of the reason why my daughter is processing so fast...:):) Yes youtube is like a library of BJJ info for us to supplement what is being taugh at her gym. But the best find of all is this place and the RUBBER GUARD....:):)

LOL Brandon Mullin??? we been watching all of his vids yesterday.... and yes he is in Houston as we saw him in action 2 weeks ago for the super fight at Fight to Win Texas Open. And guess what???? His 2nd fight was again my daughter's coach Cameron Graves. That has got to be the best fight we've seen in person. My daughter's coach is only 18 years old and holds a Blue Belt, but that day....that day he fought like a season black belt just like Brandon. Brandon hit Cameron with everything he got and scoring points, but he couldn't finish Cameron off. Cameron was like a BJJ Houdini or something, keep on escaping everything and doing some scoring himself. But at the end of it all, Brandon was too seasoned of a fighter. Both guys earned each other's respect.
