I am kind of surprised I haven't heard anyone mention this maybe I should read all the replies to make sure, but I find on most wrestlers it is easier to take or attack their backs than your average Jiu Jitsu player. Of course there are exceptions to this but most wrestlers I role with I initiate various sweep setups and they show me their back and all I have to do is make the appropriate transition. I know this isn't too specific but there are a lot of examples of this I have come across rolling both gi and no gi. You should also keep in mind it can be tough to keep a good wrestler's back with both hooks because most of them are very explosive and are pretty good at shucking you back into guard so I usually take one hook and use the swim move or take half back and attack the choke and then insert my second hook while he is defending.
