There is nothing wrong with Gluten. 0.5-1% of our population has an immune disease which makes them intolerant to the protein. Wheat allergies are often confused/combined with this disease but only occur in about .21% of the population. The rate of Celiac disease is believed to be increasing in recent decades; it is not yet known why but is not believed to be due to more frequent diagnosis, as it is not difficult to identify individuals with the disease. Common symptoms are far more than just bloating and doctors can easily test for gluten anti-bodies to diagnose the disease.
