I've never tried it and I seem to get to mount often enough that I feel like I should start practicing. S mount looks really effective but it looks really unstable so I never go for it. Any tips? Like, where should my weight be? Do I keep one hand posted at all times? Both knees on the ground? Robson Moura keeps his foot under the shoulder. Vinny Mag looks like he slides his calf under the shoulder. Is it a matter of preference?
Any tips would be great.

This. Once you have your weight on his chest and both legs are pinching his shoulders in, you've got him pretty immobilized. From here I take my time establishing as deep a hook as I can on his near arm before transitioning to spider-web. If you're distributing your weight properly, your opponent should feel grateful that you're no longer sitting on his chest. Robson's ass mount is high level!
I like to switch to S Mount from a full mount to obtain the armbar or triangle but haven't seen this transition. I like that he traps his opponents arm and keeps that pressure on the entire time. Thanks for posting!
