I think the furthest a YouTube jiu Jitsu guy could go without having any formal teaching would be blue belt. If they watch videos and UFC they could get a general understanding of basic submissions and sweeps. Of course none of that would be useful if they weren't athletic. Being able to understand the bodies movements isn't something you learn in a day especially when someone else is trying to do the same against you. If the guy has good general understanding of body movements maybe from other sports or martial arts its possible he could hang with blue belts but I wouldn't say everyone could do it.
As someone who learned first from videos, I agree. I think you could get to the blue belt level as far as knowledge of techniques but unless you've trained in some other grappling I don't see how you could get beyond that and really I think you'd be a weak blue belt. I do really well against blue belts but at first I just couldn't seem to apply most chokes and makes them actually work and there are a ton of other nuances that you just could not learn with out rolling.
I don't plan on pursuing a belt unless I one day have to get one to compete on a higher level, otherwise I just don't see the point. Now when I was a kid and in other martial arts I was defiantly a belt chaser.
