    For anyone who liked my granola this weekend and wanted the recipe...:-)

    Tori's Granola Clusters:

    Dry Ingredients:
    4 cups rolled oats
    1 tsp cinnamon
    ˝ tsp salt
    1 cup dried fruit (I usually do 1 whole pack of dried cranberries, dried apricots are awesome too, as well as banana chips.)
    1 cup nuts (I prefer sliced almonds, I might do more than 1 cup sometimes. Also, walnuts are really good as well, peanuts and pistachios...not so much. :/)

    Wet Ingredients:
    5 tablespoons melted coconut oil
    2 tsp real vanilla
    ˝ cup Agave nectar
    1/4 cup pure cane sugar (Vegan sugar)
    1 tbsp honey (If you like more of a honey taste or don't have enough agave nectar, just add more honey.)

    Add Last:
    3 egg whites, lightly beaten


    Instructions:

    Preheat oven to 300°

    Mix together dry ingredients in a big bowl.

    In a separate bowl, whisk together all WET ingredients EXCEPT for the egg whites.
    Heat bowl in microwave for 1 minute, just long enough to melt the coconut oil. NOW, whisk in the egg whites.

    Pour wet ingredients into dry ingredients and stir, making sure all dry ingredients are well coated. You will know when you've stirred enough, the oats will start to cluster together. Also, at this point you want to taste a bite to make sure it will be sweet enough for you.

    Split mixture between two oiled baking sheets. Spread evenly and press down firmly into a thin to medium thick “donut” shaped single layer with a spatula. (This prevents an uncooked middle.)

    Bake in preheated oven for 25 minutes (takes 25 in my oven for decently crunchy, 23 for more chewy and 27-30 for more of a really crispy brown bottom) until granola is golden brown and crisp at the edges. Do not stir while baking. Allow to cool for 15 minutes on baking sheet before breaking into Medium sized clusters.

    Makes 9 cups or 72 oz.
    Good for two weeks after baking.


    I made 6 batches last Thursday night for the weekend. It made 4 Quaker oat containers worth. I still have half a container. This stuff is awesome!
