The danger with holding the move even for a few seconds once in mount is that your opponent could elect to tap regardless - claiming neck crank. If setup correctly for the sweep the 100% requires very little additional pressure/squeeze to elicit a tap once mounted. The ref may also immediately recognize and assume the danger of the potential crank and disqualify (think of how they DQ people for reaping the knee even before a heel hook is fully applied).
