There is far more depth to leg control positioning than "setting an Achillies or the heel hook". Each position of control requires a different method of escape. The positions in both these videos are not the same, and should be addressed separately. The major concern with the video you show was failing to address the attacker switching to an outside attack (i.e Ashi Garami/Outside Clamp) and finishing the straight ankle lock or him switching to the heel hook. After he puts the boot on he never addressed the heel on the hip after he squared the attacker up (brought him back to 1993), if you fail to remove the foot from your hip you'll never escaped his position of control, allowing him the ability to finish his original attack.
