When people are locking their elbows down, you can try going hindu. Gunshow also gives you an extra arm to force dead orchard.
You also want to push their wrist in, collapse their chest over their forearm and then use your mission control to lock them in place. Cutting angles off them with their forearm locked like this will cause them to squirm and attempt to fight it. To do this they will be moving their elbows and that will be your window to transition.
I don't really change my game for bigger guys. I guess at a certain point their shoulders are too large for me to go for dead orchards. But I've hit hindu on 300+ pound guys. Yea, they're stronger and their posture is harder to control. However, the same good technique I would use on a smaller guy is the technique I would attempt to use on the same bigger stronger opponent. So I wouldn't really recommend particular "big guy" techniques. I would just recommend polishing your rubber guard in general.
And like Eddie says, best way to do that is to start with guys your size of low enough skill levels that you can get your reps in.
