Any way to get a more controlled setup of that? Or is it just a pretty "once in a while" type move.

Its common in Judo (Sankaku Jime)from the turtle position.

Kiko heres some diffrent set ups used in Judo:
obviously its not in english but you get the idea. I'm trying to find the specific inverted one in the video, but I can't find one in an instructional format, just ones in competition.
