video technique question

ok so at 2:51 eddie puts in a butterfly hook
and im not sure what its for exactly

this is my guess
he has that butterfly hook so that if his opponent
tries to work a darce he uses his butterfly hook to force his opponent
to base out taking away his other hand to darce

but whats suppose to happen after that?

another reason this is bothering me is because of the lack of over hook

Well... To me it looked like he shot in half guard.. then thought about playing x guard. Thus why he has an underhook on ari's left leg.

From what I could see, J Grooms is correct. That hook in combo with grabbing the leg, allows x guard, double x, and other possibilities as well. It just looks like Ari shot his leg over real quick and Eddie momentarily lost control. Then Eddie regains control and sweeps him via Dog Fight. Then it was all offense from then on for Eddie.
