I understand was chris is talking about... I call it "the Jiu" (Jiu meaning gentle) you can feel a difference with people when you roll with them...
I know a guy that gets a ton of taps because he's so damn strong and doesn't use his "Jiu" at all and people just tap in practice cuz they're not gonna let this guy try to rip they're arm off when they are just training. But you can tell when people aren't just using a technique against you... You "feel" the setups... You "feel" the patience... And you "feel" the calculation... That's stuff you can't get from a video
