If you follow the Paleo Diet, which I do now, there is no gluten. It's simple, eat meat and veggies. Fruits and nuts are good too. ZERO processed foods and no sugar. You don't need to eat dairy, legumes, and even grains (including whole grains). Food is a bit more expensive, since veggies are more expensive than bread, rice, pasta. But the overall diet is way healthier. I actually end up eating a lot of greens, since I don't eat the other stuff. I've been considering adding sweet potato into the diet, but strictly speaking, it's not allowed in the Paleo Diet. There is no need to eat processed gluten free products. A lot of them are not even good for you. Just eat foods in its natural state. I generally go by this rule, if you can't eat it raw, then don't eat it. Besides extra virgin olive oil and balsamic vinegar and some supplements, I eat nothing that is processed.
