Normally when I post on here, I get long-winded aND obtuse. This time, I'll just say... man up. I bike 10 miles each way to jujitsu, uphill both ways in the snow. This isn't hyperbole... tonight it was -30. I also bike to the gym where I lift and run sprints and do some climbing. In all, I bike about 100 miles per week while doing everything else. In Alaska. In the winter.
Ok, I'm done being a douche (for now). What you need to do is EAT. And drink a shit-ton of water. Your diet sounds good, just double it. When I'm training hard, I eat around 6000 calories per day. Now that it's cold, I'll do more like 8000. Anything less, and I feel exactly as you describe, lethargic and stupid. Do it, and be a badass.
