I love 1911's just as much as the next guy, but there is better technology today. Almost all the 1911's you find today are NOT mil spec. This means tighter tolerances for better grouping, alloy frames and slides for lighter carry, and slight variations in construction. What this translates to is a gun that is much more finicky than the good ole reliable 1911 A1. Today's 1911 variations need to be cleaned regularly (as does your ar platform). And while you are correct that parts for a 1911 are more readily available than pretty much any other pistol design in the world, you also will not be able to fit those parts without the expertise of an experienced gunsmith. Due to the changes in design previously stated ( tighter tolerance, alloy parts) almost any 1911 part you find today will require a fair amount of smithing to fit into todays guns. You would be much better off with a glock variety if you want a durable, proven, easy to find gun.
Assuming a long term doomsday scenario where supplies are not readily available also means you cant run down to walmart and buy cleaning supplies and lube. I think you would be much more well served with a rifle platform known for its reliability. Mini-14's are a good alternative to an AR style firearm, but if you want more accuracy, why not just go with an M14 or M1 garand. Both are proven by the military and police. As a 45 man I would think you would also appreciate the merits of a 308 or 30-06 while being compared to an underpowered 5.56 (9mm is to 45acp as 5.56x45 is to 7.62x51).
I like the e-tool idea, and an 870 and a machete are both good selections also. Overall if I ended up with your list I would probably be pretty satisfied, assuming a mil spec 1911 of course.
